Low price of agar agar

An natural alternative to sugar-laden commercial jelly, this recipe uses agar-agar as a natural setting agent. Some good fruit choices are mango, strawberries, blueberries or kiwifruit. Use just one type of fruit per recipe so the colours don't mix.Bring mixture to boil, along with the raisins, then turn heat down and simmer for 5 minutes. Stir in fruit and flavouring, pour into a mould and allow to set a couple of hours in the fridge.
Add berries and bring to boil. Add honey and lemon juice and stir well. Bring to boil and cook over high heat for 5 minutes. Skim off foam; then spoon into sterile jars and seal. Process in boiling water for 15 minutes. Note: 8 baskets of berries equal 9 cups. Yield: 8 half pints.the agar is dissolved in the liquid in a small saucepan over medium-high heat, brought to a boil and then simmered until slightly thickened, about 5-7 minutes. It is then chilled in the refrigerator until set and typically enjoyed cold.
It’s dried and sold in powder form, flakes or bars and is also used as a stabiliser or thickener in many food additives. It is useful if you want to make a jelly using pineapple, kiwi fruit or papaya, as these fruits break down the protein found in gelatine, preventing the jelly from setting. This recipe was an old collection, thought of bringing something to my sister's place for her kid's birthday party, this dessert suddenly float up in mind, made it very last mintues and brought it to sister's place and let it fully set.
In Chinese food therapy and herbal medicine, longan is believed to have an effect on relaxation while chrysanthenum aids in influenza recovery. The mix of longan and chrysanthenum balances the “yin yang” in food therapy thus making it suitable for most people to consume.

Other thickeners: Carrageenan         Xanthan Gum          Konjac Gum
