Shitake Mushroom Extract E number is 37339-90-5

The name Shitake Mushroom Extract derives from the Shii Tree, its preferred host, although Shiitake may also grow on oaks and beeches. Shiitake mushrooms have been cultivated in China and Japan for a thousand years. The benefit of using Shiitake mycelium extract as opposed to the mushroom fruit body is that there are compounds in the mycelium that don't exist in the fruiting body or that may be in much higher concentration in the mycelium.
The most researched Shitake mushroom extract is known as LEM, short for Lentinula Edodes Mycelia. Lentinan is the name of another much researched compound isolated from Shiitake mushrooms, named after the Latin genus name Lentinula. Additional studies have reported positive results with Shiitake mushroom extract in conditions of chronic fatigue syndrome.

Volunteers will visit UC Davis Cancer Center three times during the study to have their blood drawn for PSA testing and other analyses, and to be monitored for such side effects as diarrhea.  This food additive is added to a countless number of foods that we may eat daily. It’s found in almost everything we eat.
