Xanthan gum was discovered by an extensive research effort by Allene Rosalind Jeanes and her research team at the United States Department of Agriculture. Xanthan gum derives its name from the strain of bacteria used during the fermentation process. In foods, xanthan gum is most often found in salad dressings and sauces. In the oil industry, xanthan gum is used in large quantities, usually to thicken drilling mud.

Xanthan gum is used for lowering blood sugar and total cholesterol in people with diabetes. Xanthan gum swells in the intestine, which stimulates the digestive tract to push stool through. Xanthan gum is a unique substance commonly found in food, cosmetic and industrial additives. Xanthan gum may be derived from soy.
Nevertheless, considering the side effects of food additives in general, they should be used only when necessary and added sparingly. Therefore, consider the ingredients that you choose for your cooking and the ingredients of ready-made food products that you buy.
